Grapefruit and Fennel Salad

Serves 4
The Ingredients:
  • 3 large red grapefruit
  • 1 large or 2 small fennel bulbs
  • 1 small bunch of mint leaves
  • macadamia or other high-quality nut or olive oil
  • Freshly ground black pepper
  • *Sea salt
The Procedure:
  1. Cut the grapefruit by cutting the tops and bottoms off and then placing it upright on the cutting board.
  2. Slice down the sides to remove the outer peel. Then slice along the membranes to separate the sections.
  3. Place the grapefruit sections in a bowl along with some of the remaining juice. Set aside about 2 tablespoons of the juice for the dressing.
  4. In another bowl, gently mix the oil and juice, and then add a pinch of sea salt.
  5. Add the fennel and mint to the grapefruit and toss gently to mix. Pour the dressing over the mix and toss to coat.
  6. Season to taste with the salt and pepper and divide onto plates to serve.
Notes:
*Sea salt comes as coarse or fine. Coarse is preferred due to its intense concentrated flavor, but fine-grained salt is ok too.
This salad also tastes great with avocado - feel free to add one or two in at the end.
