 Grapefruit and Fennel Salad
Serves 4
- The Ingredients:

- 3 large red grapefruit
- 1 large or 2 small fennel bulbs
- 1 small bunch of mint leaves
- macadamia or other high-quality nut or olive oil
- Freshly ground black pepper
- *Sea salt

- The Procedure:

- Cut the grapefruit by cutting the tops and bottoms off and then placing it upright on the cutting board.
- Slice down the sides to remove the outer peel. Then slice along the membranes to separate the sections.
- Place the grapefruit sections in a bowl along with some of the remaining juice. Set aside about 2 tablespoons of the juice for the dressing.
- In another bowl, gently mix the oil and juice, and then add a pinch of sea salt.
- Add the fennel and mint to the grapefruit and toss gently to mix. Pour the dressing over the mix and toss to coat.
- Season to taste with the salt and pepper and divide onto plates to serve.
- Notes:
- *Sea salt comes as coarse or fine. Coarse is preferred due to its intense concentrated flavor, but fine-grained salt is ok too.
This salad also tastes great with avocado - feel free to add one or two in at the end.
